The Crown GMT-10-10 is a gas-fired, self-contained steam kettle featuring a double-wall interior that forms a steam jacket around the lower two-thirds of the kettle, ensuring superior heat distribution. The hemispherical bottom design optimizes heat circulation for efficient cooking. The kettle’s interior is constructed with type 316 stainless steel, perfect for handling high-acid content products. Each kettle is mounted on a cabinet base with a full perimeter angle frame, reinforced counter, and includes hot and cold water faucet with control valves, a 3” (76 mm) deep sink with drain, grate, and splash guard for easy maintenance. The unit also features hinged doors with magnetic catches, removable side panels, and 6” (152 mm) stainless steel legs fitted with 4 adjustable flanged feet for secure floor mounting. The entire exterior is finished in #4 stainless steel, with an aluminized steel back for added durability. The stainless steel mounting legs house the steam supply and condensate, with the right leg fitted with a steam control valve. Each kettle is equipped with a tilt handle and heat-resistant knob, allowing the kettles to tilt forward past 90° for complete emptying. The kettle features a boiler control system with automatic water level control, automatic blowdown, pressure gauge, water gauge glass, operating pressure control, safety high-limit pressure control, safety relief valve, and a split water line. Electronic ignition with an On/Off switch and indicator light is included. The steam manifolds inside the cabinet are fitted with a safety relief valve and steam trap for each kettle. Standard features also include a water treatment system to ensure optimal performance.
